Oatmeal Cookies

Oatmeal Cookies

Ingredients
1 C. Butter
1 C. Sugar
1 C. Brown Sugar
2 Eggs
2 tsp Vanilla
1 tsp Salt
1/2 tsp Baking Powder
2 tsp Baking Soda
2 1/4 C. Flour
2 C. Oats
1 package Semi-Sweet Morsels

 Directions
Cream together butter and sugars. Add eggs and vanilla and mix well.  Add salt, soda, powder, flour and mix just until combined.  Add oats and morsels and mix with a wooden spoon.  Bake at 350 degrees for 10-12 minutes.

Baked Four-Cheese Pasta

Ingredients
4 slices of bacon, chopped fine
1 small onion, chopped fine
2 garlic cloves, minced
3 cups low-sodium chicken broth
1 cup heavy cream
3/4 pound penne (about 4 cups)
1/2 cup grated Parmesan cheese
1 cup frozen peas
pepper
1 cup shredded Italian 4-cheese blend

Directions
1. Pre-heat oven to 450.
2. Cook bacon, onion and garlic in large skillet over med. high heat until onion is softened - about five minutes. Add broth, cream, pasta, and 1/2 tsp salt. Cover and bring to boil. Once boiling, reduce heat to med. low and simmer, stirring frequently until pasta is tender - about 15 minutes.
3. Off heat, stir in Parmesan and peas and season with salt and pepper. Transfer to 2qt casserole dish and sprinkle with shredded cheese. Bake until cheese is melted and spotty brown- about 5 minutes.

Thanksgiving Sweet Potatoes

Ingredients
6 sweet potatoes
1 cup sugar
1/2 cup milk
1/2 cup melted butter
1 tsp. vanilla
2 eggs, beaten
1/2 tsp salt

Topping
1 cup dark brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans

Instructions
Cook potatoes until soft (we usually bake them at 250 for 3-4 hours). Remove skins. Preheat oven to 350 degrees. Grease or butter one 2 quart casserole dish. Place potatoes in mixing bowl and with an electric mixer beat on low until broken up. Increase speed to high until smooth. Reduce speed to low and add sugar, milk, butter, vanilla, eggs, and salt. Mix well. Pour sweet potato mixture into dish.

Prepare topping in a small bowl by whisking together the brown sugar, flour, butter, and pecans. Sprinkle mixture over potato mixture and bake for 40 minutes.
